IPA: the chameleon of beers

The case of beers I put together with mail order company Best of British Beer to accompany my next book club event is designed to reflect the mercurial, elusive character of the craft beer world’s favourite beer style.

Six completely different beers. All of them are, in some way, IPAs.

 

IPA is the most popular – and most argued over – beer style in craft beer. Everything about it, from its hazy origins to its colour, character and (increasingly murky) appearance, is debated passionately across social media and print publications. Its story has been mythologised, misunderstood, and endlessly redefined. Like the broader concept of craft beer itself, I’m not just fascinated by it, I’m fascinated by the fascination around it, by the varying degrees of passion, agitation and disdain it inspires.

This is why, for my third book, I undertook the frankly stupid endeavour of recreating its legendary journey by sea from Burton-on-Trent to Calcutta. This project almost broke me, in many ways, but hey – I got a great book out of it, and we’re discussing that book, and the story behind it, at my third Beer Book Club on Wednesday, 12th May.

For each of these book clubs, I’m attempting to put together a themed case of beers (or ciders, where relevant) that people attending may choose to order to drink along to the chat. Best of British Beer volunteered to help me out with a case for this one, and sent me a bottle of every beer they had in stock with “IPA” on the label. From that, I chose six beers that tell a potted history of the beer that used to be known as India Pale Ale – all quite different from each other, each excellent in its own way.  

IPA was never ‘invented’ as such – it evolved from strong beers meant for keeping, and it has continued to evolve ever since. According to contemporary reports, in the 1780s it was quite dark, murky, and very bitter. In nineteenth century India, it was bright and sparkling, compared to champagne more than anything else. In the late nineteenth and early twentieth centuries, changes in taxation and drinking habits saw a steep drop in its alcoholic strength. A few years ago, beer geeks would rage that a beer such as Greene King IPA was not a “proper” IPA because it was only 3.6% ABV. Those critics should know that a few years ago, the original 1928 recipe for GK IPA was discovered, and it’s hardly changed in the almost century since. If you could go back to the mid-twentieth century, any British brewer would have told you that it was typical of what “IPA” was at that time. And anyway, the rise of “session IPAs” means that the strength argument can no longer be coherently made by craft beer scenesters.

The American reinvention of IPA only really took off in the UK a little over a decade ago, and since then the pace of evolution has sped up dramatically. What we now think of as ‘West Coast IPA’ is referred to by some as ‘Old School IPA’. If a beer style that can only be traced back in any meaningful sense to the 1990s is now ‘old school’, what does that make IPA’s 200-year-odd history up to that point?

In a very meaningful sense, the dominant style of the moment – New England IPA – is the opposite of what IPA was before it came along. India Pale Ale became the definitive beer style of the nineteenth century, and cast its shadow over the next, because it was designed to be stored and/or to survive a long sea journey in which it was subject to massive fluctuations in temperature, which contributed to its unique character, in which hop bitterness was assertive.

Now, IPAs have next to no bitterness at all, and we’re told that we must keep them cold from packaging to consumption and drink them fresh, because their delicate character disappears after a few weeks.

The British soldiers and clerks drinking IPA in Calcutta in the 1860s would have spat out a NEIPA claiming that it was too green, that it hadn’t ‘ripened’. The modern NEIPA fan would (and often does) dismiss traditional IPA as not being IPA at all, because it is not pale enough, not juicy enough.

The Beer Judge Certification Program (BJCP), commonly regarded in the craft beer world as the arbiter of beer styles, goes so far as to state: “The term ‘IPA’ is intentionally not spelled out as ‘India Pale Ale’ since none of these beers historically went to India, and many aren’t pale.” 

So there we have it: IPA isn’t actually India Pale Ale at all, but an acronym without a home, or even a new word in its own right, a word commonly pronounced “eepa” by beer drinkers who’s first language isn’t English.

In 2014, Canadian beer writer Stephen Beaumont threw his hands up and said, “Fine, let’s face it, every beer is now an IPA.” With that in mind, here are the six beers I’ve chosen that all stake a claim to the title of IPA. I like them all – otherwise I wouldn’t have chosen them – but because of my age and experience, my heart will always be in the Old School.

Wold Top – Scarborough Fair – true to the traditional British style – crisp, bitter and balanced 

Hafod – Freestyle – A great take on what we now call West Coast IPA, resiny and piney with a firm malt backbone

Mor – Ish – Mid-twentieth century-style IPA, gently bitter and clean, lower ABV.

Windsor & Eton – Conqueror – The tautology that is a Black India Pale Ale – a blend of fresh hoppy aromas and deep, chocolatey malt.

Loch Lomond – Zoom Time – Hazy, juicy and with low bitterness, a perfect example of the New England IPA style.

Stonehouse – Vanilla Milkshake – Brewed with vanilla and lactose for an even smoother, creamier body – is this the future of IPA?

Introducing the Pete Brown Online Beer Book Club!

Most people who follow me online do so because they enjoy my books. So I thought I’d organise a beer book club on Zoom to revisit my backlist.

I’ve largely enjoyed Zoom events – I’m lucky, I haven’t had to do too many during the day at work, so they’ve remained a bit of a treat. I’ve also spoken to people at online beer events who actually prefer these chats to meeting up in real life – either because they can get to them more easily and cheaply, or because they feel more comfortable attending from the safe space of their home. I can’t wait to do physical events again, but even when we’re back at pub gigs and festivals, I still plan to both attend and run events online in addition to IRL.

Last week, I pushed an idea out on social media – what if I do a Zoom book club?  Each session, we focus on one book from my backlist. I do a talk or presentation about it, then open it up to a Q&A. After we get to the end of the formal bit, if anyone wants to stay on and chat longer, we can. It got a great response, so here we go.

I’ll be going through the books in chronological order, starting with Man Walks into a Pub on 28th April. I’m charging a small ticket price of £3.50, and tickets are on sale now.

Obviously, we thought it might be nice idea to do this with a drink in hand. You don’t have to drink through the talk, but you may well want to.

My intention is to link up with an online retailer and try to come up with some kind of offer for event attendees. I want to try to make these, in an idea world, bespoke cases that fit with the theme of the book. 

For Man Walks into a Pub, I have the perfect case ready to go, with a special offer for event attendees that’s a bit complicated, but very good. Father’s Day Presents for People Who Like Beer

Many of my books were originally published around this time of year specifically because publishers thought people would buy them for Father’s Day. They weren’t wrong. If you’re stuck for a small gift, here’s a brief recap.

I’ve always tried to write for a general audience rather than an audience of fellow beer geeks (though I hope they enjoy my books too.) I use beer as a jumping-off point, a vehicle, to explore wider themes. When I do signing events, I’d say at least half of the books I’m asked to sign are for the dads, brothers and husbands of the people buying them. I must stress that the women who have read them have really enjoyed them too, but I’m definitely a bit typecast as someone who writes for blokes who are difficult to buy for and don’t read all that much, but enjoy a beer-based yarn.

So with Father’s Day approaching on Sunday, here’s a recap. The links go to my individual pages about each book that give more detail, a bit of background and some quotes from reviews.

For the Dad who enjoys starting conversations with “I bet you didn’t know…”

Man Walks into a Pub is still my best-selling book. I called it a “sociable history” of beer because I wanted to write it like a long conversation in the pub and so it is, in the words of one reviewer, “full of bar-room bet-winning facts”. Miracle Brew is similarly full of insane facts but with a more specialised focus on what beer is made from. The title happened because of the sheer number of times I thought, “Whaaaat? No way!” as I was researching it.

For the Dad who prefers cider to beer

Bill Bradshaw and I wrote the first ever world guide to cider, and as far as I’m aware it’s still the only one. We put so much creativity into the book – Bill’s photos are utterly gorgeous – that we had none left for the title. So it’s called World’s Best Cider. There’s also quite a bit about cider in The Apple Orchard, which is not really book about cider even though some people think it is, because if I’m going to write about apples…

For the Dad who’s into British history

The history of beer and pubs is the history of Britain itself. Man Walks into a Pub got me into way more historical research than I had realised, and I wrote not just about how beer and pubs developed, but why – in order to understand them, I needed to know the context surrounding them. The same goes for IPA specifically – why did beer go on a six-month sea voyage to India? Why were the British in India in the first place? That’s what I explored in Hops & Glory. Finally for the history buff, if you’re watching A House Through Time at the moment, fancy seeing the same idea for a pub? Shakespeare’s Local is six centuries of history seen through one South London pub, in which in all likelihood Shakespeare used to drink.

For the Dad who loves a bit of natural history

The nature writing section of your local bookshop, the bit I like to all “bees and trees,” is big business right now, and I realised it is also a big part of the story of beer and cider. The Apple Orchard and Miracle Brew are very similar books: one about apples and how and where they grow, which covers how they are made into cider, and the other about hops, barley, water and yeast, and the incredible story behind each one before they even get to the brewery.

For the Dad who loves a good fry-up or fish and chips

Pie Fidelity is essentially the same idea as Man Walks into a Pub, but written about overlooked and unfairly maligned classic British dishes rather than beer. It’s my most personal book, full of memoir, food history and eating. It also happens to be my wife Liz’s favourite book of mine, and not just because it’s the one with the least stuff about beer in it.

For the Dad who enjoys a laugh

Most of my books have a good degree of humour in them, even if they aren’t ‘comedy’ books. Man Walks into a Pub has some good gags in among the history, but without doubt Three Sheets to the Wind is the funniest book I’ve written. Mainly because lots of funny stuff happened while I was researching it, and I succeeded in getting most of it down.

The Pub: A Cultural Institution is a guide to 250 of the best pubs in Britain. It’s a coffee table book, and as such it’s full of gorgeous pictures. It looks incredibly vogueish just now, because the convention around these things is that you take photos of empty pubs, so the pictures have never looked more like pubs do at the time I’m writing this. But as well as being a coffee table book, I’ve also tried to provide little vignettes of what makes each pub, and pubs in general, so special.

Happy Birthday Ratcliff Ale – tasting pretty good at 150 years old.

I got invited to a birthday party in Burton-on-Trent that was quite unlike any other – a mass tasting of six legendary beers known as the ‘Bass Corkers’.

On 16th December 1869, Ratcliff Ale was mashed in at Bass, Ratcliff & Gretton in Burton-on-Trent to celebrate the birth of a son to the Ratcliff family. It was a fairly common tradition in brewing families for such beers to be brewed ready for when these scions reached their majority at the age of 21. The story I heard was that young Master Ratcliff never made it that far, so the beer was never opened. 

On 16th December 2019, I’m in Burton to drink some Ratcliff Ale on its 150th birthday, along with five other variations on these beers designed for ageing, know to connoisseurs and collectors as the ‘Bass Corkers’. 

Bass fan and Burton beer historian Ian Webster, ably assisted by passionate fellow Burtonian beer collector Gary Summerfield, wanted to commemorate Ratclliff Ale’s anniversary, and put an appeal around Burton. Burton responded, with people donating scores of bottles – a total of 75 beers are opened for tonight’s audience of 100 or so people. This is an incredible act given that some of these bottles trade on EBay for £300 or more. I thought I knew these beers well, but I’m astonished to find there are pint bottles and quart bottles, with the occasional ultra-rare magnum. 

The way these strong ales were made was to boil the wort for twelve hours, reducing the liquid to create a very high concentration of fermentable sugars. This led to an alcohol content of around 12% ABV which, aided by heavy hopping rates, vastly reduced the chances of microbial spoilage as they aged, according to Burton Brewer and Chairman of the National Brewery Heritage Trust, Dr Harry White. Harry explains the difference between the effects of microbiological spoilage – infection that means the beer goes ‘off’ – and the effects of ageing, which is all about oxidation. 

Oxidation as ‘a complex series of interactions’ that begin with whatever oxygen is left in the bottle when it is sealed. There’s always some, and a bottle-conditioned beer needs it to start its slow, secondary fermentation. The yeast mops up the oxygen during this process, but then, when there’s nothing left for it to eat, it dies. When beer is a few years old it can taste stale, papery, or wet doggy. But there’s not a straight line into old age and decrepitude – other reactions continue to happen, and various different aspects of the beer come and go in a process John Keeling, when he was head brewer at Fuller’s, likened to sine waves, during vertical tastings of Fuller’s Vintage Ale. Those tastings were truly memorable – but even the most venerable Vintage Ale – from 1997 – is fifteen years younger than the most youthful Bass Corker, which is…

Prince’s Ale, 1982

Starting with the youngest first, the idea is you get some kind of progression. This 37-year-old, brewed to commemorate the birth of Prince William, tastes more like a three-year-old barley wine. There’s chocolate and caramel on the nose, some fruity notes reminiscent of ruby port, and no hint of papery oxidation at all. It tastes different rather than old, with a hint of meaty umami character, some acidity, but mainly a warming, welcoming fusion of malt character, alcohol and microflora. 

Princess Ale, 1978

This has a much paler caramel colour than its younger sibling. It’s much lighter on the nose, toffeeish, with hints of spice and incense. On the palate it’s lighter again, with a bitterness that’s curiously tannic rather than hoppy. Overall, it tastes old and woody – not as engaging as the beer four years younger, but just as drinkable. Maybe it’s something to do with Princess Anne having mashed the beer in, given that she doesn’t like beer.

Jubilee Strong Ale, 1977

This is much darker again, chocolate-coloured. There’s a little tartness on the nose, which reminds me of Rodenbach, and a bit of smokiness. On the palate, it’s sweet, sour and bitter – I swear there’s still a bit of hop character to it – and something that is not directly derived from hops, barley, Burton water OR Bass ale yeast.

I’m on a tasting panel with Roger Protz and a selection of former Burton Brewers. My old friend Steve Wellington – another former brewer and the man who recreated A 19th century Burton IPA for the voyage to India I recounted in Hops & Glory – is in the audience. Steve once told me that when you taste aged beers, you get a different reaction from professional brewers than you do if you assemble a broader panel of taste experts – and so it proves with this beer. The brewers up here speak of mild infection, of something getting into the bottle that shouldn’t be there. Whereas I’m thinking that Brettanomyces means ‘British fungus’, so named because it was originally associated not with Belgian sours, but vatted strong British ales. This beer reminds me that Rodenbach – one of the finest sour beers in the world – took its original inspiration from none other than Greene King. 

Prince’s Ale, 1929

Why was there a jump of fifty years between this beer and the previous (or rather, subsequent) one? I don’t know. The war was an obvious factor, but why was there not one for the Queen’s coronation? I can vaguely remember her Silver Jubilee and the incredible wave of patriotism that came with it. It was also around the same time that a large stash of the 1902 Kings Ale was discovered in Bass’s cellars, so maybe that inspired the idea for the start of the second wave of corkers that ran from 1977 to 1982.

But now we’re on to the end of the first wave, mashed in by Edward, Prince of Wales, who went on to become king for a few months before abdicating to marry an American divorcee. It had the shortest brew length of all the corkers, and is therefore the rarest. Apparently, it was still on sale in 1945, for £5 a bottle. or over £200 today – one for people who moan about ‘modern over-priced craft beers’ to think about. 

Well, if I had a spare £200, I’d pay that for a bottle today. The nose is of dried fruit – dates, prunes, figs and currants – with a hint of church incense again. The fruity character is intense, combining the complex sweetness of dried fruit with the sourness of overripe fruit. Then there’s an umami meatiness that some of my colleagues on the panel describe as marmite. 

I’m not so sure.

There’s a moment of panic whenever you’re trying to taste something with the aim of identifying that taste and communicating it to others. It’s the moment when your taste buds and olfactory bulb all flash with sensation and send blind signals deep into your cerebral cortex, and your brain seeks to contextualise what you’re experiencing versus your established knowledge and memory. When you’re primed to expect a particular flavour – when you know what you’re drinking and what it’s meant to taste like, or when someone asks you to look out for a particular flavour note – the brain usually identifies it straight away, or thinks it does. ‘Marmite’ is a common flavour note for aged beers, and if you know this, you can detect it and tick it off – flavour successfully identified. But if you didn’t know this, I’m not sure Marmite is what you’d pull out here. I’m conscious that I’ve already used it as a flavour note myself, but Marmite is a shortcut, an easy port of call, similar to when we categorise and tick off the complexity of lambic beers with the term ‘horse blanket’. It often stops us from probing further. This is spicier yet subtler than Marmite, the meatiness just one component of something broader. 

King’s Ale, 1902

The danger with the Bass corkers is you can never be quite sure how well the contents stand up. If the wax seal around cork has broken, it’s probably not worth it, as the beer will have been assaulted by oxygen over the years. So you look for the wax seal – but how do you know it wasn’t broken, and then resealed by someone decades later? When it comes to the Kings Ale, brewed by Lord Bass’s mate Edward VII, there’s an easy way to tell: the original bottlings came with a lead seal, and that’s what we’ve opened tonight. 

I opened a bottle of Kings Ale in 2009, to celebrate winning Beer Writer of the Year for the first time. There’s a blurry video of it on YouTube somewhere. My bottle didn’t have a lead seal. It poured with the look and consistency of gravy and tasted like of cork, marmite – for real this time – and death.

Tonight’s is… better than that. There’s a big waft of balsamic vinegar on the nose, and a surprisingly yeasty element. Umami here is not marmite, but porcini mushrooms. There’s chocolate, acidity and fruit on the palate. It tastes like an older, raggedier version of the Prince’s Ale, which makes sense.  But still, it’s far from unpleasant.

Ratcliff Ale, 1869

These bottles were originally sealed with red wax, so if your wax is black – like one of mine at home is – that means the contents may not be good. This one smells really clean, and pours bright and clear, like Madeira. The now-familiar incense is there, and it smells like Christmas cake. There’s bitterness and acidity, coffee and spice, alcohol heat, Madeira wine, and elements I simply don’t have the vocabulary for. It tastes like nothing else. 

By the end, I’m surprised how much I’m feeling the effects of drinking a flight of 12% ABV beers. I’ve often heard that the alcohol decays and loses its potency in beers like this. My intense desire for sleep, and the spidery handwriting in my notebook, suggest otherwise.

I’ve tasted beers that are alive and vibrant, and I’ve had beers that taste dead and decayed. The beers we’ve tasted tonight are somewhere between, having visited both poles before embarking on their own, unique journeys. There’s far more here than the effects of oxygen-driven ageing: these beers are complex processes. Tate two different bottles of the same beer, and their character can be quite different. It reminds me of the ‘generative music’ experiments created by Brian Eno, where a few simple elements are fed into a randomising system to create something that is ever changing, never quite repeating. Here, tiny differences in the microflora in each bottle can lead to ever-widening variations over time, magnified by the conditions in which each individual bottle matures – temperature, humidity, whether it’s stored upright or on its side, and so on. 

Will there be more Bass corkers? Could there be?  Well, the Queen’s Ale for Brenda’s 50th Jubilee was bottled in 500ml with a crown cap, but is still well worth seeking out. Apart from that, around ten years ago, Steve Wellington invited me to brew a new batch of Bass No.1 Barley Wine – the original recipe for Ratcliff Ale. We loaded an incredible amount of malt into the mash tun and left it for its 12-hour boil. A curry and a few hours’ sleep later, we were back in the brewery and running off a thick, dark wort that looked and smelled amazing. A few weeks later, Steve, almost tearful, informed me that it had been so long since the Bass yeast had had to contend with such a mighty wort, it simply hadn’t been up to the task. Fermentation hadn’t taken place, and the batch had had to be poured away. 

And that’s not the only problem.

In the complex world of corporate beer trademarks and ownership, the archive of Bass recipes is now owned by a different company from the people who own the Bass brand. Anheuser Busch-Inbev continue to commit many travesties with Bass, but ABI has more than one face and more than one set of opinions. Mike Siegel of Goose Island is genuinely passionate about recreating old beers from the past, as evidenced by his recent collaboration with Ron Pattinson and Wimbledon Brewery’s Derek Prentice, the wonderful Obidiah Poundage. Mike recently asked Molson Coors – owners of the Bass archive – if he could gain access to old Bass recipes with a view to reviving something akin to these legendary corkers, and was given a pretty categoric and final refusal.

Earlier tonight, Harry White made a heartfelt plea to the audience for the archives to be used much more. 

Come on guys, it’s Christmas – let’s join the dots. And could whoever currently owns the famous Bass yeast get it to some kind of yeast gym in the New Year?

One of the main points of contention about this much-mythologised style is whether or not it really was strong and hoppy, and if it was, why it was.

Wherever I’ve seen this point argued, it’s been exclusively to do with the nature of the beer itself: did it have to be strong and/or hoppy to survive the journey? What do the brewing records say?

Some eminent brewing historians have found evidence of low strength, relatively low-hopped IPAs making the journey, which is fascinating. But some commentators have then taken this as evidence that disproves the ‘myth’ that IPA was strong and hoppy.

But the logic of that is flawed: evidence of weaker, less hoppy proves that IPA did not have to be strong and hoppy. It does not disprove that strong, hoppy beers went to India.

In my research for my book Hops & Glory, I found requisition orders from the India Office from the 1870s which specified the gravity, hopping rate, size of barrel, even the width of the bung on the barrel, for both India Pale Ale and Porter. When we translated the specs into modern brewing, we had a beer that was around 8% ABV and had an insane amount of hops. When we recreated it with Everards Brewery, the volume of hops clogged up the kettle and the beer was green when it came out. It was so hoppy we had to new the same beer again without any hops, and blend to two to get a beer that was still damn hoppy. But what’s important to remember is that the alpha acid content – the potency of hops – is far higher now, far more concentrated, than it was then. You’d have had to had far greater physical quantities of hops in 1870 to get the bitterness from hops you get today.

Anyway, these requisitions prove that at least some IPA that went to India was very hoppy and very strong. But its presence against other less hoppy, weaker beers, proves that it did not have to be like this in order to survive the journey.

What does this tell us? Well, there’s only so much that looking at the production end of things can tell us. For further clues, we have to look at the consumption side. What did people in India want their beer to be like? Throughout the whole of brewing history, this is a question that is asked all too seldom.

Another contentious ‘myth’ is that IPA was brewed for the troops. For some reason, there’s a school of thought that it wasn’t. Certainly, it wasn’t the only think they drank. And yes, the civilians in India drank it too. But the big orders I saw for requisition were specifically for the he numbers of troops that were sent to India after the 1857 first war of Indian Independence (referred to by colonialists as the Indian Mutiny.)

Being a soldier in India was a life of short periods of extreme violence separated by long stretches of total boredom. The soldiers filled that boredom by drinking.

When Fanny Parkes went India on a ship full of soldiers in 1827, she came to know many of her fellow passengers and was shocked at how quickly many of them died. The average life expectancy of a soldier serving in Calcutta was just three months. Disease was a far bigger killer than combat, and much of it was caused by alcohol.

Beer couldn’t be brewed well in India, but a drink known as arak could be made simply by drawing off palm sap and letting it ferment in the hot sun. Arak drinking contests claimed the first European casualties in India when the Dutch and English spice traders got there. One binge could be fatal.

So, in order to keep soldiers alive, they had to be given alcohol that was strong and flavourful, like arak, but not fatal. IPA was strong because if it wasn’t, the boozy soldiers would have drunk arak instead.

As for hoppiness? The vivid hop characters we love today would have vanished from the beer after months on a hot ship. But the flavours changed. The locals used to say IPA ‘ripened’, and when it was ripe, they described it character as being like champagne. My sea-matured IPA certainly had that character to it – somewhere between what we think of as IPA and barley wine.

So – at least some IPA was strong and hoppy. It didn’t have to be. It was like that because that’s how people wanted it to be, so they drank it instead of the local gut rot.

Long Read: Burton IPA’s arrival in India.

The reason I’m not blogging at the moment is that I’m deep into writing up my next beer book, What Are You Drinking? I’m hoping to finish this draft in the next two weeks, and it’ll be published spring next year. 


I’m going through the four key raw materials of beer and telling their stories, and I’m currently up to water. It’s the toughest one to do. Today, after writing about Dublin and Bohemia, I’m writing about the special water that made Burton on Trent the ale brewing capital of the world, and I’ve gone back into my first draft of Hops and Glory for help. That first draft was 50 per cent longer than the book that was eventually published. I remember my editor reading it and saying, “Look, I’m enjoying it OK? But I’m expecting to read about a sea voyage to India and all I’m saying is I’m on page 156 and I’m still on a canal boat outside Burton.” My first attempt at editing it resulted in it being 5000 longer. 


We had to be brutal. A lot of the granular history of Burton and IPA got cut, whole chapters summarised into a few lines each. I’ve sometimes regretted this because while many people tell me they enjoy the book, it doesn’t get mentioned in the canon of historical research on IPA very often. It was aimed at a general audience rather than a beer geek or brewer, and some of the stuff serious beer heads might find fascinating really slowed the pace down for everyone else.


So this morning, I’ve dug out the first draft hoping to find a previously unpublished treatise on the properties of Burton water and its suitability for brewing strong pale ale. It’s not quite there, and I’ve misremembered what a lot of the research actually told me. But I did find this, and I found it fascinating. If you’re a hardcore IPA nut, you might find it interesting too. Long-read blog posts seem to be in fashion at the moment, and this makes up for me not writing anything else here, and there’s no other way I can use it, so why not? If you don’t fancy spending 20 minutes reading detailed beer history, you can leave now and I’ll come back to proper blogging as soon as I can.


The following passage was cut down to about half this length in the book, and loses many of the primary quotes, which get summarised  But in full, it tells the story of what happened when Burton IPA first arrived in India. In writing the book, I didn’t just want to get an accurate handle on what the beer was really like; I wanted to know why. What made it work in India? Why did it take off? Why did the British in India drink it? How was it served? What did they think of it?


So here we are. To set the scene: The London brewer Hodgson’s owns the beer market in India. He has good links with the East India Company’s sea captains and they make a lot of money by transporting and selling his beers. But Hodgson gets greedy and tries to hike prices, flooding the market with cheap beer whenever a competitor appears, then whacking them up again when the competitor backs off. Campbell Marjoribanks of the East India Company visits Samuel Allsopp in Burton and suggests that he might like a crack at the Indian market. He gives Allsopp a sample of Hodgson’s beer and Allsopp brews a version of it in Burton, unaware that the difference in brewing water compared to London (see?) will make it a dramatically different beer. But will its superior quality be enough to counter Hodgson’s sharp marketing practices? He places his first brew on two ships sailing from Liverpool: the Bencoolen and the Seaforth. They’re also carrying some of Hodgson’s beer. Six months later, they arrive at the dock in Calcutta…

Given the Bencoolen factory’s historicreputation as a disease-blown, drink-sodden, last chance saloon that convicts rather hang than be posted to, and its censure by ‘John Company’ over its
enthusiasm for Burton ale, it’s perhaps fitting that Samuel Allsopp’s first consignment
of strong beer for India went on a ship of the same name.  But much had changed in the century since the
Bencoolen public table’s legendary binge.
Affairs in the east were more organised, more civilised now.  Beer was a
respectable drink, a sign of good standing, drunk by people who were creating a
New England that was different from home in only a few key respects: it was
much hotter, a bit more dangerous, and they were able to live like lords rather
than clerks.
But an exotic world still lay outside the
window.  Fanny Parkes, arriving only a
few months earlier, painted a vivid picture of the sight that would have
greeted the Bencoolen as she made her
final passage up the Hugli River:
Passing through the different vessels that crowd the Hoogly
off Calcutta gave me great pleasure; the fine merchant-ships, the gay,
well-trimmed American vessels, the grotesque forms of the Arab ships, the
Chinese vessels with an eye on each side the bows to enable the vessel to see
her way across the deep waters, the native vessels in all their fanciful and
picturesque forms, the pleasure-boats of private gentlemen, the beautiful
private residences in Chowringhee, the Government-house, the crowds of people
and vehicles of all descriptions, both European and Asiatic, form a scene of
beauty of which I know not the equal.
A further key difference is that here,
beer was still a luxury rather than the centuries-old staple it was back
home.  The market Hodgson’s dominated was
not huge.  John Bell, who compiled trade
figures for the Bengal authorities, estimated the average annual consumption of
beer at almost seven thousand hogsheads, a quarter of which went to Madras, the
rest to Bengal.  ‘There is reason to
suppose that the demand would increase if the price was steady’, he wrote, ‘but
while it fluctuates from six to fifteen rupees a dozen it is not likely that
the consumption will be increased’.  On
the contrary, ‘thousands would be compelled to give it up and take to drinking
French clarets, which are and have been selling at from three to eighteen
rupees a dozen’.  French clarets?  Less than a decade after Waterloo?  No, we couldn’t have that.  The supply of affordable beer had to be
stabilised.
The fact that pale ale occupied a very
similar price range to French claret speaks volumes about the quality of the
beer and the demand for it in this climate.
That quality was strictly upheld by the import agents.  Some historians wax dramatically about how
rejected beer was poured away into the harbour.
This did sometimes happen – WH Roberts heard from a correspondent in
1845 of 80 hogsheads being poured away – but it would have had to have been
incredibly bad beer to warrant such measures.
The Calcutta Gazette carried
plenty of ads such as the one in April 1809 for ‘62 hogsheads of REJECTED BEER,
bearing different Marks, imported on the Honourable Company’s ship General
Stuart.’  Even broached casks – with beer
that could only have been stale – were sold for anything they could get: ‘8
full and one ullaged Hogsheads of Damaged Beer imported on the Honourable
Company ship Tottenham’ were sold by Captain Hughes once permission had been
given by the customs collectors.
Because even beer that couldn’t pass
muster had its uses.  It might have
molasses pitched in, the sugar giving it an additional fermentation, then be
watered down and mixed with spices to disguise the rank taste.  If it was too bad even for that, it could be
used to form the base of ketchup: one of the first recipes for ‘catsup’ was
devised by Hannah Glasse in 1747 ‘for the Captains of ships’.  It could keep for up to twenty years, and
consisted of stale beer, anchovies, mace, cloves, pepper, ginger and
mushrooms.
But there was to be no Samuel Allsopp’s
ketchup after the tasters had done their work.
The Burton pale ale was approved.
The cargo went to the city’s auction houses, and the Calcutta Gazette filled up with beer
ads.
Hodgson was clearly at the
swamp-the-market phase in his protectionist cycle.  He must have got wind of Allsopp’s intentions,
because eleven and a half thousand hogsheads of beer were imported in the
1822-23 season, double the amount of year before, four times the amount the
year before that, and double anything that would be achieved for the rest of
the decade.  The ads in the paper became
increasingly lyrical in their praise.  In
April the front page boasted ‘prime picked’ Hodgson’s pale ale, which
‘surpasses in superiority of quality, any of the former season’s… as fine
Malt Liquor as ever was drunk’.
The price of ale plummeted.  Hodgson’s beer was selling for twenty-five
rupees per hogshead – the price of Allsopp’s ale was set at twenty.  It was a good start, but it wasn’t great –
twenty rupees a hogshead when in some years you could get fifteen for a dozen
quart bottles was not the basis for a profitable business.  John Bell wasn’t happy:
The enhanced scale of importation which took place in
1822-23 was both unwise, and attended with great loss to those immediately
concerned with the trial of monopolizing the Indian market; and the sorrowful
winding up of that speculation, by forced sales of unsound beer… evinced a
want of proper discrimination on the part of those whose time would have been
more properly and advantageously employed in the immediate exercise of their calling.
Allsopp’s second consignment fared
better, helped by a fortunate bit of circumstance.  When the second ship, the Seaforth, came in, Tulloh & Co as
usual offered ‘the finest stock of HODGSON’S ripe PALE ALE to be met with in
India’, but further down the page sat the following notice:
REJECTED BEER
To be sold by Public Auction, by Messrs Taylor & Co, on
the CUSTOM HOUSE WHARF, by permission of the Collector of Sea Customs, at
eleven o’ Clock precisely, on Saturday next, the 28th Instant, 48
HOGSHEADS of Hodgson’s BEER, and 17 empty HOGSHEADS, landed from the ship
Timandra, and 30 hogsheads of Hodgson’s BEER, landed from the ship Seaforth.
A good portion of Hodgson’s beer had
spoiled.  Allsopp’s beer, on the same
ship, had not.  This time, it fetched
forty rupees at auction.
With a journey of up to six months each
way, brewers in England had to wait for up to a year to learn how their
business had gone.  But slowly, the
letters began to arrive back in Burton.
Mr Gisborne, a customer of the first order, wrote to Allsopp in July
1823 asking if the trade in Burton ale could be expanded, recommending that he
be given the authority to bottle the ale for retail on arrival.  In November 1824, Mr J C Bailton wrote from
Calcutta:
I have watched the whole progress of your ale… With
reference to the loss you have sustained in your first shipments, you must have
been prepared for that, had you known
that market as well as I do; here almost everything is name, and
Hodgson’s has so long stood without a rival, that it was a matter of
astonishment how your ale could have stood in competition; but that it did is a
fact, and I myself was present when a butt of yours fetched 136 rupees, and a
butt of Hodgson’s only 80 rupees at public sale.
Captain Chapman wrote that the ale had
turned out well, that a bigger shipment should be sent the following year, and
that even then it might be scarce.  In
the same month, Messrs Gordon & Co. wrote:
After bottling off a portion, which was approved by our
friends, the demand for this article has since been very great, and we now have
orders to some extent for this ale.  We
would, therefore, strenuously recommend Mr Allsopp to make further consignments
of it; and we have every reason to believe he will have a fair competition with
Messrs Hodgson & Co.
The trickle of orders coming in via
agents in Liverpool and London turned into a steady stream.  In 1824 Allsopp sent out two thousand
barrels, and in October 1825, Captain Probyn wrote that large numbers of his
passengers preferred Allsopp’s to Hodgson’s ale, and that ‘many who had been
long in India, declared it to be preferable to any they had ever tasted in the
East’.
In the Calcutta Weekly Price Current of November 1826, the following entry
occurs:

No other beer is quoted.
In the Calcutta Gazette, the auction houses were advertising ‘a fresh
importation of Allsopp’s Highly Admired Pale Burton Ale’.  Messrs Tulloh & Co, for so long in the
grip of Hodgson, (it was they who would go on to write the highly critical Circular on the Beer Trade of India) had
much pleasure in announcing to the public that they had available a small batch
of ‘ALLSOPP’S FAMOUS PALE ALE… Great attention was bestowed on the brewing of
this batch, and is it has come out in the short period of 105 days from
Liverpool, there is every reason to expect it will turn out as almost all
Allsopp’s Shipments have done, in excellent order’.  They still sold Hodgson’s beer of course, but
now there was a worthy rival the copy for Hodgson’s seemed a little less effusive: ‘it will be carefully examined by Messrs
Watson & Co and none passed but such as is pronounced to be decidedly of
the very best quality’, they reassured us, and while it was still ‘the finest
beer that comes to the Indian market’, this was only ‘as far as the general
taste goes’.  As Tizard put it, ‘the
spell had been broken’.  In four seasons,
Allsopp had shattered Hodgson’s grip on the market.
In the face of seemingly insurmountable
odds, there was something about Allsopp’s beer that was powerful enough to
supplant the established, dominant market leader who seemingly held all the
cards.  Of course some of this success
was due to the vision and determination of Allsopp himself, a man who ‘saw no difficulties
which time, perseverance, resolution, consistency, and steady, unswerving
honour could not overcome’. But there was more to it than that.  What Campbell Marjoribanks couldn’t have
realised when he decided to court Allsopp is that he was approaching a brewer
who possessed a very special ingredient.
The Trent Valley is a broad trough carved
out of ancient rock, covered with a layer of sand and gravel anywhere up to
sixty feet deep.  Rain water trickles
through these beds for tens of thousands of years, and as a result, by the time
it emerges from wells and springs it contains a unique composition of minerals
that makes it not only superior to soft, southern water from London, but the
best water for ale brewing found anywhere in the world.  It has a higher sulphate content than any
other major brewing centre, giving a dry, bitter flavour to beer.  Sulphate means brewers can add large amounts
of hops to the beer without it becoming too astringently bitter.  Brewing scientists also claim that water for
ale should be high in calcium – Burton has the highest calcium content of any
major brewing region.  It should be high
in magnesium  and low in sodium and
bicarbonate – once more, Burton water is.
The strong, hoppy beer devised by Hodgson was given a whole new
dimension when brewed in Burton.  It was
a phenomenal stroke of good fortune, bringing a style of beer that suited the
Indian climate to a place that would never have had good reason to brew it, but
was, in the words of one later Bass historian, ‘The one spot in the world where
the well-water is so obviously intended by Nature for kindly union with those
fruits of the earth, to give beer incomparable’.
In 1828 a senior partner at George’s, a
porter brewery in Bristol that had decided to experiement with pale ale,
suggested that Hodgson’s beer simply didn’t match up to the new brews from
Burton.  Writing to Willis & Earle in
Calcutta, he said of Hodgson’s ale, ‘We neither like its thick and muddy appearance
or rank bitter flavour’.  Two years later,
when George’s joined the golden beer rush to Calcutta, the same partner
explained, ‘We made a slight alteration to the Ale by brewing it rather of a
paler colour and more hop’d to make it as similar as possible to some samples
of Allsopp’s ale’.
Even if Hodgson’s recipe was recreated
exactly in Burton, with the only difference being Burton instead of London
water, the Burton version would have been superior in quality and character
when it reached India.  And Hodgson was
simply his own worst enemy.  Having
already pissed off the East India Company to such an extent that one of its
directors went out of his way to find someone capable of putting up a fight,
Hodgson, surely expecting to rout Allsopp from the market, changed his terms of
business in 1824 and shut out the very people he relied on to get his beer to
India. According to the Circular on the
Beer Trade in India,
the captains and officers of the East Indiamen had
been Hodgson’s best customers thanks largely to the generous credit terms he
extended to them.  Hodgson’s ale was ‘one
of the principal articles in their investments’ until, in 1824, he not only
raised his prices to them, but refused now to sell on any terms except for hard
cash:
Hodgson & Co., confident of the power they had over the
market, sent the Beer out for sale on their own account; thus they, in a short
time, became Brewers. Shippers, Merchants, and even retailers.  These proceedings naturally and justly
excited hostile feelings in those engaged in the Indian Trade at home; while
the public here, seeing at last the complete control which Hodgson endeavoured
to maintain over the market, turned their faces against him, and gave
encouragement to other Brewers who fortunately sent out excellent beer.
That ‘encouragement’ took many
forms.  Happy customers were eager to
advise Allsopp not just on how to brew his beer, but when the best time was to
send it.  Then as now, one of the things
that mattered most was that the beer was served cool, which wasn’t easy when
the temperature rarely dipped below thirty degrees C and refrigeration wasn’t
going to appear for another fifty years.
Happily, one of India’s main manufactures provided the answer.  In 1828, when young Henry Allsopp was working
for Gladstone & Co, a Liverpool shipping agent, he received a letter for a
Mr Lyon in Calcutta:
I would advise your father to ship his Beer
in the month of November or latter end of October, to arrive here in March or
April; it is then our hottest season, and the quantity of Beer then consumed is
tremendous.  Your Beer is certainly a
most delightful beverage during the hot season; it is always cooled with
saltpetre before it is drank; we can make it by this article as cold as ice.
‘F.E.W.’ reminisced in a newspaper
article years later that ‘beer was always deliciously cooled with saltpetre,
when everything else was lukewarm; a point very much in its favour’.
A bottle or flask of ale would be
immersed in a solution of saltpetre.
Water was added, and as it mixed with the saltpetre it would cool within
a few minutes.  It was an effective
method but fiddly and expensive, especially given that a more lucrative use of
saltpetre was in the manufacture of gunpowder, which the Company still needed
even more than cold beer.
Gradually, an even more ingenious cooling
method came into use.  Bottles were hung
outdoors, inside a cage or cradle, and covered with a wet cloth, the edges of
which sat in a trough of water at the bottom of the cage.  The hot wind evaporated the water, and the
evaporation cooled the water.  The cloths
sucked up more water, creating a continuous cooling process.
Michael Bass soon noticed what was
happening over at Allsopp’s.  He’d
already experimented with pale malts a few years previously, and now, shut out
of the Baltic trade by Benjamin Wilson twenty years before, it was time for his
revenge.  Forced to turn back to the
domestic market after the Baltic fiasco, Bass had built far better trading
links with important cities such as Liverpool, London and Manchester.  Now, his network was more developed than
Allsopp’s, and he knew the canals better.
From 1823 there was a sharp increase in Bass sales to London
agents.  By 1828 41 per cent of Bass’
output was going to London and Liverpool, much of it in large consignments for
export.  In 1828 the Calcutta Gazette was advertising ‘Hodgson’s Allsopp’s and Basse’s
Beer in wood, and in bottle, of different ages, some all perfection, others
approaching it’, and most auction houses continued to promote all three brands
over the next few years.  In 1832 Bass
exported 5193 barrels to Calcutta – slightly more than Hodgson and Allsopp’s
combined shipments.  Although Michel Bass
didn’t live to see it (he died in 1827, leaving the brewery to his son, Michael
Thomas) his victory over Allsopp’s was decisive.  The two would remain rivals for another
century, each far bigger than any other Burton brewer, but Allsopp would never
again quite challenge Bass’ supremacy.
In 1835 John Bell noted that the beer
trade had fallen off again, and that ‘the most remarkable deficiency is in
supplies from Hodgson; on the other hand, Bass and Allsopp have shipped more
extensively.’  A year later, he could
barely keep the triumph felt by Bengal’s populace from his remarks:
Beer is an article subject to the vicissitude of caprice
more than any other article perhaps imported into Calcutta.  A very few years ago Hodgson stood alone in
the market, and the idea of rivalry was never entertained.  Thus he was enabled to reach his own terms –
cash – without any guarantee as to quality; and success, for some time, gained
for him a name and wealth.
People in England and India, at length began to discover,
that the magic spell might be broken by the strong hand of competition; and
although some of those who first had temerity enough to enter the field against
so formidable an antagonist, supported as he was by the strongest prejudice,
suffered severely, Hodgson was at length defeated, and the market is now
supplied by a variety of brewers.
Tizard was happy to advise this ‘variety
of brewers’ on how to prosper in India:
The first point of consideration is Quality… The ale
adapted for this market should be a clear-light-bitter-pale
ale of a moderate strength, and by no means what is termed in Calcutta heady;
it should be shipped in hogsheads which, we need scarcely observe, should be
most carefully coopered… Another point is, that by frequent consignments, you
acquire a name, which, as you may be
aware, is everything in India.
While it would be a long time before the
word was used freely in commerce, in order to succeed, these beers had to be
strong brands.  This was Hodgson’s legacy: his name became
synonymous with quality.  To beat him,
you had to beat him not only on quality, but also on sheer brand
awareness.  It’s no coincidence that,
fifty years after establishing itself in India, Bass would become the UK’s
first registered trade mark.
As well as the triumvirate of Bass,
Allsopp, and to an increasingly lesser extent, Hodgson, by 1833 brewers such as
Ind and Smith, Worthington, Charrington and Barclay Perkins of London and
Tennent of Glasgow were sending pale ale to India.  By 1837 Bell notes the arrival of beer from
the United States and ‘Cape Beer’, but these were to make up a tiny amount of
the beer drunk in India – as Tizard states, it was ‘clear that England must
furnish the supply’.
Imports doubled through the 1830s.  The competition and regularity of supply
stabilised prices, allowing the taste for beer to spread throughout
Anglo-Indian society, right through to ‘the poorer classes of British
inhabitants, which having once acquired, they will continue to indulge as long
as prices remain moderate’.  Allsopp’s
‘Burton India Ale’ lost out to Bass in sales, but was still considered by many,
including Tizard, to be ‘the most salable’, thanks mainly to its ‘superior
lightness and brilliancy’.  Soon,
according to Bell, ‘no less than twenty brewers now send out Beer from England,
where one occupied the field a very few years ago’.
Beer now quickly supplanted other drinks.  Sales of Madeira collapsed from 85204 rupees
in 1829-30 to 21632 rupees in 1833-34, with Bell observing that ‘this
once-favoured wine stands… as an example of the effects produced on trade by
the caprice of fashion… the sudden distaste for Madeira would almost lead us
to believe that some magic influence had been at work’.  The consumption of spirits was ‘certainly not
so great as formerly’, port was ‘limited’ and other drinks such as champagne
and hock had ‘never been very great’.  As
for the over-supply of Claret, ‘we hope that the French have at last seen the
folly of driving such a ruinous trade’.
As Bushnan remarked in
1853, thanks to the many fine qualities of Samuel Allsopp:
Since the year 1824 no Englishman has been
reduced to the sad necessity of drinking French claret for the want of a
draught of good, sound, wholesome, and refreshing English Burton beer.
